This is one of the best brioches I’ve ever made; light and delicate despite its richness. Long fermentation and good olive oil keep it from feeling heavy. While it can be sliced for beautiful toasts, it truly shines as a loaf meant for the center of the table, to be pulled apart and shared.

About the Grains:

Appalachian White: A hard white winter wheat bred for East Coast humidity. Buttery, mild, and creamy in flavor, without the tannins of red wheat.

Warthog: A hard red winter wheat with robust flavor and field resilience, favored by small-scale growers prioritizing taste and nutrition
