Why this bread:
In the bible it states that the holy trinity consists of: bread, coffee, and butter. Now, I am not beholden to the bible, but as a recovering Catholic I admit that there are some things I cannot shake, and this trinity is certainly one of them.
Brioche is inherently delicious thanks to the depth of flavor that the whole grains bring, but coffee gives it an acidity that lightens its character, and adds layers of warm, caramelized flavors.

A modern, hard winter wheat was conceived at NC State in 2009 to bring hard winter wheat production to the southeast.
Historically, the Mid-Atlantic South has grown almost exclusively soft wheat (lower protein, better for crackers, noodles, etc). However, the growing resurgence of bakers has brought much traction for hard wheats such as NuEast.
