Why this bread:

I love a seeded loaf for its deeply layered flavors, but also for its texture; each seed awaking you with every bite. That being said, while I love a seeded loaf, sometimes I crave a gentler experience where I can taste the grain and seeds working together. Spelt is a deliciously nutty grain that pairs perfectly with the toastiness of sesame and flax.

About the grains:  

Spelt: is an ancient grain dating from 5000 BCE that was originally cultivated in what is now known as modern day Iran. Similar to wheat, spelt is a member of the farro family, also known as farro grande. Spelt is known for its nutty, graham like flavor and beautiful amber color
