Why this pastry :
While I love any good vehicle for strawberries and cream, I really wanted to create an experience where the grain existed in harmony with the filling.. The bright acidity of the strawberries, paired with the pepperiness of the pastry cream and tied together with the floral aroma and nuttiness offered by the grain creates a ratatouille-like finish.
