Why this bread:
I recently had the pleasure of going to the 2025 Asheville Bread Festival, where I got to take a class on Southern Maize, hosted by David Bauer of Farm and Sparrow.
One of the most memorable parts of this class was getting to taste and work with Cateto flint corn; I was desperate to make something with it as soon as I got home.
Learning more about its South American roots had my mind immediately jump to what is perhaps my family’s favourite bread, and I simply had to marry the two.
About the grains:
Cateto Orange Flint Corn: Known for a distinctly rich and cheesy flavor.
Cateto Orange Flint is an important historic landrace, originating from South America.
Eventually, it reached Europe and gave birth to many of the orange corns found in Northern Italy that are utilized for polenta.
