Why this bread:

Barley can be used in a broad range of culinary applications, and my first encounter with it was with barley tea.

As someone who loves nutty, toasty flavors, I was immediately smitten.

The magic of barley continues to reveal itself when it is sprouted and malted and made into barley malt syrup, an unrefined sweetener that has a distinct malty caramel flavor without the sweetness level of a refined sugar.

Both the barley grain and syrup are used in this loaf to create a deliciously nuanced bite.

About the grains:

Locke’s Mill Barley - A cereal grain, meaning the edible seed of a grass species.

Barley is one of the oldest domesticated grains, cultivated for over 10,000 years.
